Fish Tails – 8/17/16

FISH TAILS

  • Aloha … A few things to mention – On the Local scene, we finally got in some LOCAL ALBACORE. Also some CA KING SALMON, and some Canadian KINGS, and we should be strong all week long … Maybe a little price-dip in the works?  And they’re baaack – Years ago, we carried a little/petite MANILA CLAM from Tomales Bay/Pt. Reyes, which one of our original partners dubbed ‘BABY TENDERS’ … We have ‘em again!!  Local HALIBUT are in, ALASKAN too, and NO SoCal Hal.
  • Keep your eye on rising AHI prices … Don’t really know the full story, but it seems like a lotta’ changes in the worldwide Ahi game lately, and pricing has been very volatile.  Also don’t know how long this’ll last, but we do expect pricing to settle in at higher than where it’s been.
  • We did receive some FZN ROCK SHRIMP today, and we still like to mention less expensive subs such as Florida PINK SHRIMP and 70/90 P&D’s, and CleanFish’s famous LAUGHING-BIRD SHRIMP, and the closest alternative to Rock Shrmp are LANGOUSTINE MEAT CLUSTERS.
  • ROCK & BLACK & TRUE & LING COD all week long.  PETRALE SOLE.
  • HUACHINAGO  /  DORADE & BRONZINI  /  Frm’d STRIPERs
  • SCOTTISH SALMON are into a phase of not-very-large fish (only 11/13’s avail), and with the recent spike in price on the Scottish product (because of the shortage created with the collapse of the Chilean industry), y’all may as well be using LOCH DUART SALMON, the most recognized Farm’d Salmon in the world, and deservedly so.
  • LITTLE NECK CLAMS ought to be available again by tomorrow or Thurs.
  • The Frozen MAINE/CANADIAN ROCK CRABMEAT will be avail only in the 5-lb units for a while.

Fish Tails – 8/9/16

FISH TAILS

  • Hey, some real nice LOCALLY-caught Wild KING SALMON swam in. First time since June for da’ Local ones. The season has really been a bust all up and down the coast, so this is kinda special. We may get more later this week, but we don’t expect to be overloaded at any time from now ‘til the end. Price ain’t too outrageous, either. Take advantage of this opportunity!
  • Still can’t find any Local Albacore – it’s always a short season, but August and September are typically smokin’. Just ain’t happenin’ right now.
  • Speakin’ of not smokin’, it’s been 3 weeks, and really hasn’t been all that difficult.
  • NO Mahi, either. YES on YELLOWTAIL JACK and Frozen MAHI FILLETS.
  • ROCK SHRIMP – though we are getting some Fresh product in, there hasn’t been nearly enough product landed for the Frozen processors to gear up their machinery. Stay tuned, but this could develop into a severe shortage, with another price spike on both Fresh & Frozen Rock Shrmp. There are alternatives – 70/90-ct P&D SHRIMP and Florida PINK SHRIMP are about the same size, and significantly cheaper. Also, being that Rock Shrimp are actually a Lobster, we think that our LANGOUSTINE MEAT CLUSTERS would be a real wise choice.
  • SALT-SPRING Is. MUSSELS continue to have mechanical problems at the plant, so we’re getting cut waaay back on our deliveries. Expect PENN COVE and/or Taylor MEDs (WA) as ‘subs’.
  • PETRALE may be tight again this week, especially tomorrow, but Robi’s working on it. (He’s finding out that it ain’t all that easy being the new sheriff in town).
  • Don’t anticipate any Cod shortages this week like we had on Saturday … avail is ROCK & TRUE & BLACK & LING.
  • CORVINA & WHITE-C-BASS  /  Farmed STRIPED BASS  /  BRONZINI & DORADE  /  AK & LOCAL & SoCAL HALIBUT
  • Fresh SQUID in da’ house, HUACHINANGO too, a Price-List up top, and some “Re-Tail” below …

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
  • Some pretty significant changes over here – Colin Lafrenz is retiring from the fish biz, and moving into dirt-based farming. Jude, our buyer for the last several years, is stepping into Colin’s position, and Robi becomes our new buyer. And welcome Lloyd Dizon coming in from off the floor to take over the opening responsibilities that Robi has handled like a pro.
  • For your pricing awareness – The Farmed Salmon industry over in the UK is now experiencing the same strain on their supply as the Canadian fishery felt when environmental conditions devastated the Chilean farms, putting a big void in worldwide supply. Prices are Up on our SCOTTISH SALMON, effective now. Here’s the good news – there ain’t much difference at all in price right now between the highly recognized (and richly deserved) “LOCH DUART” Salmon and any of the other Scottish labels. Furthermore, ‘Loch Duarts’ are growing out of the 6/9’s stage, as we’re seeing a lot more 9/11’s and even a few 11/13’s starting to come in.
FISH TAILS
  • Improving, improving. Not quite ready to tackle the PCT, and you won’t hear “hey, let’s go have a smoke” coming from me anymore, but happy to be writing another ‘Tail” …
  • Got in some pretty nice Wild KING SALMON from Canada today. Just a few fish left, with a big ‘maybe’ if we’ll see any more this Not counting on it.
  • We’re NOT gonna see any Local Albacore, so you’ll be getting TOMBO as a perfect ‘sub’.
  • For Bass, CORVINA showed up, and Mex’n WHITE C-BASS is coming tomorrow. Along with some SanDiegoX-Press #1 BIG-EYE TUNA.
  • SALT-SPRING Is MUSSELS for tomorrow. And ONO & OPAH. A few dzn SOFT-SHELL CRABS, with more on Sat. UNI for Saturday. Fresh SQUID. HIRAMASA. SKOOKUMs are da’ special.
  • PETRALE is very tight – good chance we’ll run out before Saturday – have a ‘sub’ in mind… Perhaps HALIBUT, either AK or LOCAL or SoCAL.
  • Still NO Mahi. YELLOWTAIL JACK seems to be the “go-to” sub, but what’s everyone’s aversion to Consistent & Inexpensive IQF MAHI? You won’t be disappointed.
Prices are Up on our SCOTTISH SALMON (mostly ‘WesterRoss’ label recently), effective now. Fish Tails – 8/3/16
FISH TAILS
  • OK, that wasn’t a vacation, but rather a hospitalization and recovery, so for both of you that have been wondering why no ‘Fish Tails’ lately, I’m baaack!
  • All of this during some pretty significant changes over here – Colin Lafrenz is retiring from the fish biz, and moving into dirt-based farming. Jude, our buyer for the last several years, is stepping into Colin’s position, and Robi becomes our new buyer. And welcome Lloyd Dizon coming in from off the floor to take over the opening responsibilities that Robi has handled like a pro.
  • Give me another minute or so to get my bearings straight, but here’s what we got so far –
  • Real rough start to the week up and down the coast – Only 10/20 AK HALIBUT for Weds, should have 20/40’s by Thurs. NO Wild King Sal yet, waiting for confirmation on some Canadian KINGS for Thursday maybe? Still NO Albacore, maybe some by Friday. Bass is tight, with some CORVINA expected in, but NO White C-Bass.
  • Water pump problems at SALT SPRING Is MUSSELS, so our next batch is delayed a day til Friday, which means none for Thursday. We’ll have PENN COVEs.
  • In good shape with: PETRALE SOLE / ROCK & TRUE & LING & BLACK COD.
  • SoCAL & LOCAL HAL – SOFT-SHELL CRABS for Thursday – YELLOWTAIL JACK, but NO Mahi – ONO by Friday – UNI – FRESH SQUID – HIRAMASA
  • This week’s spesh are gonna be SKOOKUMs … Prices up top … some old ReTail below …
  • For your pricing awareness – The Farmed Salmon industry over in the UK is now experiencing the same strain on their supply as the Canadian fishery felt when environmental conditions devastated the Chilean farms, putting a big void in worldwide supply. Prices are Up on our SCOTTISH SALMON (mostly ‘WesterRoss’ label recently), effective now. Here’s the good news – there ain’t much difference at all in price right now between the highly recognized (and richly deserved) “LOCH DUART” Salmon and any of the other Scottish labels. Furthermore, ‘Loch Duarts’ are growing out of the 6/9’s stage, as we’re seeing a lot more 9/11’s and even a few 11/13’s starting to come in.
  • More pricing – SWORDFISH, which tends to go through price fluctuations, is real pricey right now.  There is NO Mahi avail, and pricing has gone through the roof anyway, as it often does this time of year. We’ll probably opt to not participate for a while. YELLOWTAIL JACK, & HIRAMASA, could fill in nicely, and FZN MAHI FILLETS are a bargain and actually work real well, with no discernable difference in most applications.  Big demand back East for LOBSTERS around the 4th of July and summertime has them critters climbing up in price. LOBSTER-MEAT is up again too.
